A pizza is just a handful of ingredients. With so few, every one counts. Here you'll find the essentials: the flour from Naples, tomatoes that actually taste like tomatoes, and a few toppings that change everything.
Few ingredients, good ingredients
A Neapolitan is flour, water, salt, yeast, tomatoes and mozzarella. That's it. When the recipe is that short, you can taste the quality of every ingredient.
Where to start
- Caputo flourThe flour Naples pizzerias use. Pizzeria 00 to start, Fioreglut for gluten-free.
- TomatoesWhole, for making your own sauce. San Marzano D.O.P. and organic Bianco DiNapoli.
- SaucesReady to spread, for nights when you want to get straight to it.
- ToppingsCalabrian chilies, Tropea onions, vegetables in oil.

What actually matters
- The flourIt has to handle the heat of a pizza oven. Supermarket flour burns before the crust rises.
- The tomatoA good canned tomato beats a fresh one out of season. Crushed by hand with a little salt, it's all you need.
- RestraintAn overloaded pizza won't bake in ninety seconds. Less, but better.

Whole tomatoes or ready-made sauce?
Whole tomatoes to control the texture and the salt. Ready-made sauce to save time on a weeknight. Both make a very good pizza.
