Caputo Classica Tipo 00 wheat flour 2.2 lbs (1 kg) or 11 lbs (5 kg) is great if you are short on time for rising.
It also allows you to create an excellent pizza, although a longer fermentation is often recommended. You can also make other sweet treats such as breads, croissants, or baguettes.
Similar to its counterpart Pizzeria , it is offered in two sizes.
Fermentation time? 4 to 6 hours at room temperature. For more flavor, you can also opt for slow fermentation of 12 to 24 hours in the fridge.
Since the fermentation is shorter than for flour Cuoco (Chef's Flour) , you might decide one morning to prepare pizza dough for supper. But try both: because the longer the rising time, the more incredible the pizza (you just have to plan ahead a little!).

What are the rules for good pizza flour?
