Caputo yeast is used in very small quantities, especially in long fermentation, where 0.1 to 0.3 g per kg of flour is used. Good news: your 500g sachet will last much longer than you think. Use our dough calculator to find your exact dosage according to your fermentation time.
Once the sachet is opened, transfer the yeast to an airtight container and store it in the refrigerator or freezer. Humidity and heat are its enemies. If you have any doubt about its freshness, test the yeast by mixing it with lukewarm water and a little sugar: if it doesn't foam, it's no longer active.
