Caputo "00" Bread Flour is for you if you're looking for homemade bread with a beautiful rise, airy crumb, and a golden crust. The kind of bread that smells like a bakery even before it's out of the oven.
Also used alone or in a blend for more rustic homemade pizzas (pizza in teglia, al taglio, focaccia), thanks to its good strength and generous aeration.
It's a Tipo 00, so very finely milled. The result? A supple dough, pleasant to work with and that develops well during resting. It provides enough strength to support fermentation, without making the dough difficult to handle.
Fermentation time? 4 to 6 hours at room temperature. For more flavor, you can also opt for slow fermentation of 12 to 24 hours in the fridge.
Since the fermentation is shorter, you can, one good morning, decide to prepare your "bread of the day." But try both: because the longer the fermentation, the more the flavors develop and the crumb becomes interesting (you just have to plan ahead a little!).
