Description

The smallest oven Fontana makes. Propane only, 120 lbs, fits on a balcony or a condo terrace. Won the Red Dot Design Award in 2022 for one reason: Fontana put the burner at the back of the chamber, not on the side. Heat goes everywhere evenly. No hot spots.

Our advice

The Maestro 60 is the smallest Fontana format, propane only, built for balconies, condo terraces, and small yards. It's the only Fontana with the burner at the back instead of the side, which gives even better heat distribution across the chamber. Easy ignition, daily simplicity.

We recommend it if: you cook for 2 to 4 people on average, you have a balcony or a small patio, you want the simplicity of gas and a real Fontana in compact format.

Choose the Napoli if: you want gas and wood flexibility in a more compact format (two pizzas).

Choose the Volta 70 if: you want gas plus digital control and Wi-Fi precision.

Our suggestion: pair it with the Fontana portable pizza desk (sold separately), designed for the Maestro format. And consider the Saputo stones if you're chasing pure Neapolitan at 900°F in 60 seconds.

Maintenance and Precautions

Daily care

  • Let the oven cool completely before cleaning
  • Brush the cooking stone with a brass brush, never water or soap directly on a hot stone
  • Wipe the exterior with a damp cloth and mild cleaner

Winter and protection

  • The Maestro 60 is built to stay outdoors year-round thanks to stainless steel and anti-corrosion treatment
  • At 120 lbs, it's the rare Fontana you can wheel into a shed or garage for winter
  • We recommend a Fontana cover to extend its life
  • In very cold weather, bring the oven up gradually on first fire

Don't

  • Never use the oven without the chimney cap installed
  • Never pour cold water on a hot stone (it cracks)
  • Minimum clearance to combustibles per the Fontana manual, Intertek-ETL certified
  • Check the propane tank and gas connections periodically

Will the Maestro 60 fit on a condo balcony?
Yes, that's exactly what it's built for. Compact format, 120 lbs, 30 inches wide. Still, check your condo bylaws about gas appliances on balconies, many Canadian condo buildings have specific restrictions about gas appliances on balconies.
Why is the burner at the back instead of the side?
Fontana is the only manufacturer to put the burner at the back of the oven. It gives a more even heat distribution across the chamber, avoids hot spots on one side, and lets you cook both pizzas at once without constant rotation. It's an innovation that earned them the Red Dot Design Award in 2022.
How long does heat-up take?
About 30 minutes to reach 750°F (400°C), perfect for pizza. If you want to push to 900°F (482°C) for real Neapolitan in 90 seconds, plan on 40 to 50 minutes. Max temp is 900°F (482°C).
Does the Maestro 60 run on wood or natural gas?
No. The Maestro 60 runs on propane only. It's not a hybrid oven and doesn't have a wood option. If you're looking for gas/wood flexibility, look at the Napoli, Roma, or Firenze instead.
What's the difference between the Maestro 60 and the Napoli?
The Maestro 60 is much smaller (120 lbs vs 220 lbs), with a lower cooking chamber, and runs on propane only. The Napoli is hybrid gas and wood. Same capacity (two pizzas), but the difference in thermal mass means the Napoli holds heat better between batches. If you have the space for the Napoli and you host regularly, go with the Napoli. If you're in a condo or short on space, the Maestro 60 is the right pick.
