Description

The Classico 2 Pizze is the traditional Alfa, sized for a terrace. Domed ceiling, stainless steel front, the look of a neighbourhood pizzeria without the footprint. Turn the dial, give it twenty minutes, and you're at 1000°F with a Neapolitan out in 90 seconds.

What sets it apart from the Moderno is the all-stainless shell and the deeper dome. Underneath, it's the same Heat Genius. A true HeatKeeper firebrick, made in Italy, that holds heat well past the lava stone or ceramic you find in mass-market ovens. Double-layer ceramic insulation keeps the heat in and the shell cool to the touch. The Full Effect flue rolls hot air back over the pizza instead of losing it up the chimney.

This is the one we point people to when space is tight but nothing about the bake is up for negotiation. A city terrace, a wide balcony, a corner of the yard. And the day you want live fire, Alfa's hybrid kit turns the gas oven into a wood-fired one. You pick, night by night.

Our advice

Go with it if you want a real high-heat Italian oven but square footage is the constraint. Two at a time feeds six or eight without anyone waiting.

Step up to the 4 Pizze if you host big and you host often. Much wider chamber, four per batch.

What we'd suggest: propane if you want to move the oven around, natural gas if there's already a line in the yard. And add the hybrid kit up front if you already know wood is coming.

Maintenance and Precautions

Day to day

Let the oven cool, then brush the floor with a brass brush. No soap, no water on the brick: the heat burns off residue on the next firing. Wipe the stainless shell with a soft cloth and a mild cleaner.

Winter and protection

In our Canadian climate, keep the oven covered between uses with the Alfa cover. For winter, store it under shelter or leave it outside well covered and up off the ground.

What to avoid

Do not run it wide open on a cold oven the first few times. Bring the heat up gradually to break the brick in. Never use abrasives on the floor, and never move the oven while it is hot.

Does this oven make real Neapolitan pizza?
Yes. It reaches 1000°F (500°C), the temperature a Neapolitan needs to bake in 60 to 90 seconds. The HeatKeeper firebrick keeps the floor hot between pizzas so you can cook back to back.
Propane or natural gas, which should I choose?
Propane if you want to move the oven with no hookup. Natural gas if you already have a line in the yard and the oven stays put. Both cook exactly the same, and a conversion kit exists if you change your mind later.
What's the difference between the Classico and the Moderno?
The shell. The Classico is all stainless with a deeper dome, the Moderno goes for colour and clean lines. The cooking technology is identical. It's a choice of look, not of performance.
Can I cook with wood in this oven?
Yes, with the Alfa hybrid kit sold separately. It drops into the chamber and turns the gas oven into a wood-fired one. You decide which fuel to run, night by night.
Can I use it year-round in our climate?
Yes, as long as you protect it with its cover between uses and let it heat a little longer when it is cold out. The double insulation handles thermal shock well. We have customers making pizza in the dead of winter.
