Description

Hot peppers grown in Quebec, packed in oil with fresh celery and garlic. Six ingredients, no preservatives, and up to seven pepper varieties in the jar depending on the season.

Pimenter la vie makes this once a year. Two weeks in the fall, at harvest, all of it by hand, from an Italian recipe the family has been making for years. When the batch runs out, that is it until next fall.

This is not a hot sauce. You taste the peppers before you feel them, and the celery and garlic give it some body. Our Calabrian jars go a lot higher if heat is what you are after. This one you can put across a whole pizza without anyone backing off.

On pizza, either way works. Before the bake, the oil gets into the cheese and the peppers soften. Add it after and it stays chunky, with more of an edge. Worth doing both on the same night to see which one you like.

How we use it

On pizza

  • Dot it over the toppings before the bake, do not spread it like a sauce
  • Or put the jar on the table and let everyone add their own
  • Drain it a bit if you are heavy handed, too much oil softens the crust

Two that work

  • Tomato, fior di latte, Italian sausage, peppers added out of the oven
  • White base, ricotta, a drizzle of honey, then the peppers. Sweet and hot is the one people remember

The rest of the week

  • Stir a spoonful into a pasta sauce at the end
  • Eggs, sandwiches, anything with a mild cheese

Once open, keep it in the fridge and make sure the peppers stay under the oil. If you want actual heat, Bomba dell’Amore is a different animal.

FAQ

How hot is it?

Noticeable, not punishing. It is built so you taste the peppers rather than brace against them. If you want real heat, our Calabrian jars go a lot higher.

Before or after the bake?

Both. Before, the oil gets into the cheese and the peppers soften. After, it stays chunky and sharper. Try it both ways on the same night.

Why is it only around part of the year?

There is one production, two weeks every fall, all of it by hand. When the batch is gone it is gone until the next harvest.
