The 12" or 16" Pizza grill is the accessory you underestimate... until you try it.
It's used for both cooking and serving, but it's during cooking that it really makes a difference. It's particularly useful in two situations: when you assemble your pizza directly on it to bake without stress, and especially when you're making a very thin-crust New York style pizza that needs support.
Why? Because aluminum transfers heat well. The perforations allows air to reach the crust for per-fect cooking. This ventilation also helps keep the crust crispy after cooking, as the holes prevent moisture from accumulating.
However, be careful: don't leave the uncooked dough on the grill for too long before launching (otherwise, the dough will get into the holes and it will be difficult to separate the pizza from the grill afterwards!).

The grid is designed for temperatures of 450–550°F in conventional ovens and pizza ovens in softer modes. This is where it excels, baking in just a few minutes. For baking at 750°F+, we do not recommend it at these temperatures, as it may deform. For a Neapolitan pizza in 90 seconds, your oven's refractory stone does all the work.
