Description

The Cozze 13" turns the stone for you. Slide the pizza in, close the door, and the cordierite disc does its laps while the fire handles the rest.

That changes everything when you're new to high-heat cooking. At 950°F, a pizza browns fast, and knowing exactly when to turn it with a peel takes practice. 360° rotation settles the question on your very first bake.

The triple U-shaped burner wraps heat around the stone, front, sides and back. Heat comes from everywhere at once, the crust puffs and chars evenly, and the base stays crisp to the last slice.

Ready to cook in fifteen minutes, a pizza in two. With the door in place the oven recovers its heat between bakes, so you serve at the table’s pace instead of the oven’s.

Our advice

We recommend the Cozze 13" if you want 950°F heat without having to learn the peel. The stone turns on its own, colour stays even, and the learning curve all but disappears.

On the first burn, let the oven come up to temperature for about fifteen minutes with the door in place before you launch anything. Between pizzas, close the door for a moment so the stone can recover its heat.

If you would rather build the technique and the hand skill, look at the Gozney Arc Lite. If you want to cook for a bigger table, the Cozze 17" does the same thing in a larger format.

Maintenance and Precautions

Day to day

Wipe the outside with a soft cloth and warm soapy water, no bleach. Inside, let the heat do the work: at 950°F, residue burns off on its own. Finish with a stone brush or a dry cloth once the oven has cooled.

Winter storage and protection

The Cozze is made for outdoor use, but it doesn't like sitting exposed to the weather. Cover it with the Cozze 13" cover between cooks and store it dry for the winter. Take the batteries out before storage, and keep the cordierite stone away from moisture.

What to avoid

No abrasive or chlorine-based cleaners on any surface. Never let a hot stone meet cold water. And keep the oven outdoors, it isn't built for indoor use.

Do you have to turn the pizza in the Cozze 13"?
No. The cordierite stone turns itself a full 360° as the pizza bakes, so the crust browns evenly all the way around. You use the peel to launch and retrieve, and that's it.
What size pizza can it bake?
The stone measures 13.6 inches across and takes pizzas up to 13 inches. That's a size worth sharing, and more generous than the 12-inch portable ovens.
Does the rotation need an outlet?
No. The rotation motor and the electronic ignition run on AA batteries, so so you can set the oven up wherever you want without an extension cord.
Do you need to buy a regulator or hose separately?
No. The propane hose and regulator come in the box, so the oven connects straight to a standard tank. For a natural gas setup, look at the Gozney Dome ovens or the Alfa range instead.
How is this different from a pizza oven without a rotating stone?
On a fixed-stone oven, you turn the pizza yourself with a peel, which takes practice and a bit of timing. The rotating stone does that move for you. You get more consistent bakes, especially in the first few weeks.
Can the Cozze stay outside through winter?
The oven is made for outdoor use, but it shouldn't sit exposed to the weather. Store it dry or cover it with the Cozze 13" cover, and keep the cordierite stone away from moisture.
