Description

The Classico 2 Pizze on wood is the version that doesn't cut corners. No dial, no tank. You light it, you feed it, and you cook with a live flame rolling under a stainless dome. The floor climbs to 1000°F and a Neapolitan comes out in 90 seconds.

The wood version runs a bigger floor than the gas, 28 by 20 inches instead of 24 by 20, because no burner is taking up room. That gives you space to push the coals aside and work out front. The HeatKeeper firebrick, made in Italy, takes the heat and gives it back slowly, double-layer ceramic insulation keeps it in, and the Full Effect flue rolls hot air back over the pizza instead of losing it up the chimney.

This is the oven for people who want the ritual. Splitting wood, building the fire, watching the flame lick the dome. It takes longer than gas and that's exactly the point. If what you want is pizza on a Tuesday without thinking about it, buy the gas version.

Our advice

Go with it if the fire is part of what you're after, not just the pizza. You're fine managing coals, you like the smell and the motion, and the bigger floor gives you room to work.

Take the gas version instead if you want to cook on a weeknight with no setup. Twenty minutes, one dial, done. Wood asks more of you.

What we'd suggest: add the log holder up front. It lets air move between the logs, the fire catches faster, and you stop overloading the chamber.

Maintenance and Precautions

Day to day

Let the ash cool completely before you clear it, then brush the floor with a brass brush. No soap, no water on the brick. Past 660°F the oven burns off its own residue.

Winter and protection

In our Canadian climate, keep the oven covered between uses with the Alfa cover. For winter, store it under shelter or leave it outside well covered and up off the ground.

What to avoid

Do not overload the chamber with wood, which is exactly what the log holder is for. Bring the heat up gradually the first few times to break the brick in. Never put hot ash in a bin.

Why we love it

We like it because it makes you slow down. Build the fire, wait for the brick to go white, push the coals over. That's time spent outside, not time spent watching an oven. And the wider floor on the wood version genuinely changes how comfortable it is to work when the pizzas start stacking up.

How long does it take to come up to heat on wood?
Give it 30 to 45 minutes depending on your wood and the weather, a bit longer than a gas version. You'll know it's ready when the dome above the flame clears.
What wood should I burn?
Dry hardwood, split small. Maple, oak, beech or fruitwood. Skip softwood, which gums up the chimney, and anything treated or painted.
Is the floor really bigger than on the gas version?
Yes. 28 x 20 in on wood against 24 x 20 in on gas, because no burner takes up room in the chamber. That gives you space to push the coals over and work out front.
Can I convert this oven to gas later?
No. The Classico on wood and the Classico on gas are two separate models, not two settings of the same oven. The hybrid kit works the other way round: it lets you burn wood in a gas oven.
Can I use it year-round in our climate?
Yes, as long as you protect it with its cover between uses and allow a little more warm-up time when it is cold out. The double insulation handles thermal shock well.
