Fontana's original wood oven, in production since 1978. Dual chamber: fire below, cooking above, with forced convection. Three shelves, trays, an interior light. Honestly, calling this a pizza oven undersells it. It's a full Italian wood-fired kitchen oven. Pizza is one thing it does. Bread, roasts, slow cooks, it does those too.

Handmade in Mantua, Italy, since 1978.

Fontana built the first metal wood-fired pizza oven in the world. Forty-five years later, the same family still runs the shop. The Gusto has been in their lineup the whole time.

Our advice

The Gusto is structurally different from other Fontanas. Instead of a single chamber where flame cooks directly, it has two chambers: the fire chamber below, the cooking chamber above, with forced convection. The result: a gentler, more even cook, ideal for bread, roasts, tarts, and New York-style pizza (not pure Neapolitan at very high temps).

We recommend it if: you want a versatile oven (bread, roasts, pizza, desserts), you appreciate the traditional Italian wood-fired concept with convection, you regularly cook things other than pizza.

Choose a Margherita or Mangiafuoco if: your priority is Neapolitan pizza at 900°F. The Gusto cooks at a more moderate max temperature (great for New York-style but not for 60-second Neapolitan that needs 900°F).

Our suggestion: it's a heavy, imposing oven. Plan for a stable permanent location. The Gusto sits like a piece of outdoor architecture, not an oven you move around.

What's the difference between the Gusto and a Margherita or Mangiafuoco?
It's a category difference, not just a size difference. The Margherita/Mangiafuoco/Marinara are single-chamber ovens with flame directly in the cooking chamber, built for Neapolitan pizza at 900°F in 60 to 90 seconds. The Gusto has two separate chambers with forced convection: a gentler cook, ideal for bread, roasts, and New York-style pizza (cooked at lower temperatures). If your priority is Neapolitan, this isn't the Gusto. If you want a fully versatile oven, this is it.
How long does heat-up take?
Plan on 45 minutes for full preheat. Longer than a Mangiafuoco (30 minutes) because the dual-chamber system needs more mass to come up to temp. In return, the Gusto holds heat for about 1.5 hours after preheat, letting you run multiple cooks without reloading the fire.
Can the Gusto stay outdoors through a Canadian winter?
Yes. The Gusto is built to stay outdoors year-round thanks to 304 stainless steel. Given its weight (around 900 lbs), it's the kind of oven you install permanently anyway. We recommend a Fontana cover to extend its life. In very cold weather, bring the oven up gradually on first fire.
Why is the Gusto classified as a "pizza oven" if pizza isn't its strength?
Honestly, it's a classification shortcut. The Gusto cooks great pizza, but at the traditional Italian or New York-style pace, not pure Neapolitan that needs 900°F in 60-90 seconds. If we had to reclassify it, we'd call it a multifunction Italian oven. But it cooks pizza, just as it cooks bread, roasts, and everything else.
What kind of wood?
Dry hardwood only: maple, oak, beech, fruitwoods. Never softwood like pine, never treated or painted wood. For logs, keep them 14 to 16 inches max.
