The Ooni brush does two things. One side has stiff stainless steel bristles that sweep off the flour and ash after a cook, and the other side is a scraper for the burnt bits that bake onto the stone and won't brush away. The head is shaped to actually get into the corners, which is where the buildup always hides and where most brushes can't reach.
The Short brush is made for 12 to 16 inch ovens like the Koda 2 or the Karu 12, and the Long brush is built for the bigger 16 to 24 inch ovens like the Koda 2 Max, so you can clear the back without leaning your hand into the heat. You just match the size to your oven.
