Description

The Moderno 3 Pizze Wood is wood fire for hosting big. Three pizzas at a time, the flame rolling through a more generous vault, and a yard that smells of wood all afternoon. The oven of the long dinner, the one that gathers the crew around the embers with nobody waiting on a slice.

Underneath sits Alfa's Heat Genius. A true firebrick, made in Italy, that holds heat like the floor of a Naples pizzeria, well past the lava stone or ceramic you find in mass-market ovens. Double-layer insulation keeps the heat in and the shell cool to the touch. The Full Effect flue rolls hot air back over the pizza instead of losing it up the chimney.

Two finishes to choose from: Ruby Red and Fire Yellow. Prefer the same capacity with the ease of gas and wood as a kit option? The 3 Pizze Gas is its gas-fired counterpart.

Step up to the Allegro if you're going bigger, up to five over wood.

What we'd suggest: add the Alfa wood holder to hold the rhythm when the orders come.

Maintenance and Precautions

Day to day

Let the oven cool, then brush the floor with a brass brush. No soap, no water on the brick: the heat burns off residue on the next firing. Wipe the stainless shell with a soft cloth.

Winter and protection

In our Canadian climate, keep the oven covered between uses with the Alfa cover. For winter, store it sheltered or leave it outside well covered and raised off the ground.

Avoid

Do not run a cold oven to full power the first few times: bring it up gradually to season the brick. Never use abrasive cleaners on the floor. Do not move the oven while hot.

Does this oven make real Neapolitan pizza?
Yes. It reaches 1000°F (500°C), the temperature a Neapolitan needs to bake in 60 to 90 seconds. The HeatKeeper firebrick keeps the floor hot between pizzas so you can cook back to back.
Why does the Ruby Red cost more than the Fire Yellow?
On this wood line, Alfa offers the Ruby Red finish at a higher price than the Fire Yellow. It is a manufacturer choice. The exact price shows when you select your color.
How long does it take to heat with wood?
Plan on 30 to 45 minutes of wood preheating. It is also when you prep the dough and the guests arrive. The preheat is part of the experience, not against it.
Can I use it year-round in our climate?
Yes, as long as you protect it with its cover between uses and let it heat a little longer when it is cold out. The double insulation handles thermal shock well. We have customers making pizza in the dead of winter.
