Perforated or solid peel: which one should you choose?

A perforated peel drops excess flour before the launch, so you get less smoke, less burnt crust underneath, and a cleaner oven. It comes into its own when the oven runs hot and you are baking in a rhythm. A solid peel stays a little more forgiving while you are learning. Once your dough is well floured and your hand is steady, the perforated one refines the result.

12 in or 14 in : which diameter should you pick?

Choose a head that overhangs your pizzas by about 1 to 2 inches. The 30 cm (12 in) handles personal to medium pizzas, while the 37 cm (14 in) carries larger ones, up to a wide Neapolitan format. Also check that the head clears the mouth of your oven.

How do you care for it?

Wash it by hand in warm water, then dry it well. No dishwasher, no abrasive sponge, no acidic detergent, all of which damage the anodizing. Avoid soaking it or leaving it on a hot surface for long.
