Description
A spoonful of tomato paste is often what separates a decent sauce from one people remember.
Bianco DiNapoli start from organic California tomatoes ripened on the vine, washed, sorted, then crushed to remove skin and seeds. The pulp is reduced five times over, which gives a dense paste, deep red, intense without being sharp.
It does two jobs: tightening a sauce that runs, and giving depth to a sauce that falls flat. In both cases we are talking about one spoon, not more.
A 6 oz tin lasts a long time, because you use very little at a time. Once opened, move it to a sealed container and cover the surface with a thread of olive oil to stop it darkening.
