Arc XL or Dome: price is not the real question

Our honest take, from Quebec.

At Lapizzashop, we sell the Arc XL and the Dome side-by-side, and we've been getting the same question several times a week since the beginning of summer: "The Arc XL is in my cart, but the Dome is on my mind. Is the difference really worth it?"

We understand the hesitation. The Arc XL wins our comparisons, it dominates our rankings, and it deserves to. But comparing the Arc XL and the Dome on price is like comparing two things that don't play the same role in a backyard. We're going to break down the question properly, because at this level of investment, the worst mistake isn't overpaying. It's buying the wrong project.

Two excellent ovens, but not two versions of the same oven

On paper, both cook a 16-inch pizza at true Neapolitan temperature. If the comparison stopped there, the Arc XL would win every time: cheaper, simpler, lighter.

But the spec sheet hides the real distinction. The Arc XL is a propane pizza oven, superb in that role, the best we know at its price point. The Dome is an outdoor kitchen: three fuels (wood, charcoal, gas), the thermal mass of a restaurant oven, a device that roasts, grills, and bakes bread as much as it churns out pizzas. One is an instrument. The other is a centerpiece. Two different purchases, for two different projects.

The wood question: betting for or against your enthusiasm

Here's what we observe with our customers, season after season. Almost everyone starts with gas, because it's simple and Tuesday night doesn't wait. Then, on a Saturday with company, they light the wood. And for those evenings, they never go back.

The Arc XL cooks with propane, period. You can't add wood to it later. Choosing the Arc XL means betting that fire will never tempt you. For some, it's a clear-headed bet: they know themselves, they want simplicity, and they win. For others, it's betting against their own enthusiasm. And that's exactly the bet people regret, because the second oven always costs more than the initial price difference.

Ask yourself honestly: does fire tempt you, even a little? If the answer is "maybe," that's already an answer.

The volume question: what happens at the sixth pizza

The other dividing line is the pace of your evenings. For four to six people, the Arc XL churns out pizzas without faltering, and you'll never feel like you're short an oven.

With eight, ten, twelve people, thermal mass becomes the decisive argument. The Dome keeps its stone ready pizza after pizza, even on a cool September evening. That's the difference between the sixth pizza coming out like the first, and having to apologize for the end of service. Nobody wants to apologize for their pizza.

And if your evenings are more like twelve or fifteen than eight, look directly at the Dome XL: three 10-inch pizzas in parallel, or one 18-inch. We dedicated a full review to it, because it completely changes the pace of an evening.

The second oven calculation

Let's talk numbers, properly, for once. At the time of writing, the difference between the Arc XL and the Dome is about $1,500. That's real, and we're not going to pretend it's nothing.

But here's the calculation people make too late. Someone who buys the Arc XL, discovers wood-fired cooking at a friend's house the following summer and wants to upgrade, doesn't just pay the difference. They buy a whole new oven. The $1,500 gap becomes a $2,700 detour, plus selling the first one at a loss. Almost no one regrets getting the oven that does both. Many regret getting the more affordable one, telling themselves they'd see later.

If you've been hesitating between the two for weeks, it's probably not a coincidence. It's often a sign that you're already picturing yourself with a wood fire. Listen to that signal.

When the Arc XL is the right choice, period

We say it frankly, because it's true and because we sell both. If you know you'll be cooking with gas, that simplicity is your priority, and that your evenings revolve around six people, the Arc XL is the best purchase you can make. It heats up fast, it's very forgiving, and it produces pizzas that end all discussions. You save $1,500 for flour, peels, and accessories that do the rest of the work. What we want to avoid is the opposite: the person who already hosted ten people every Saturday, who dreamed of fire, and who got the Arc XL because the comparison chart stopped at the price.

Our verdict, by profile

You cook with gas, evenings with four to six people, simplicity above all. The Arc XL, without hesitation. It's the sweet spot for most backyards in Quebec.

Fire tempts you, you entertain often, the oven is installed to stay. The Dome. Its dual wood and gas life is exactly what it's designed for, and it's the oven you buy once.

Twelve people or more, permanent outdoor kitchen, cooking beyond pizza. The Dome XL plays in another category, and if you recognize yourself here, you probably already know it.

What is the difference between the Gozney Arc XL and the Dome? Both cook a 16-inch pizza at the same temperature. The Arc XL runs on propane only, it's lighter and less expensive. The Dome is hybrid (wood, charcoal, gas), with more thermal mass to churn out pizzas and cook far beyond pizza.

Does the Arc XL cook pizza as well as the Dome? For a gas pizza, yes: same temperature, same 16-inch size, superb results. The difference lies in wood, continuous thermal mass, and cooking versatility, not in the quality of an individual pizza.

Can wood be added to an Arc XL later? No. The Arc XL is designed for propane only. If wood fire is part of your plans, even hypothetical ones, you need to choose a hybrid oven from the start, like the Dome or Dome XL.

Is the Dome worth $1,500 more than the Arc XL? If you want wood, if you entertain eight people or more regularly, or if you see the oven as the center of an outdoor kitchen for ten years, yes. If you'll be cooking with gas for intimate evenings, no: keep the difference and get the Arc XL.

Dome or Dome XL? The Dome cooks one 16-inch or two 10-inch pizzas, the XL cooks one 18-inch, two 12-inch, or three 10-inch pizzas at the same time. For eight to ten regular guests, the Dome is sufficient. Twelve or more, or great ambitions beyond pizza, the XL is justified.


The right oven isn't the one that wins the comparison. It's the one that matches what you're building in your backyard.
