Description

The Moderno 2 Pizze brings real Neapolitan fire to your backyard. Two 12-inch pizzas at a time, 1000°F, a blistered crust in 90 seconds. Turn it on, give it twenty minutes, and you're cooking.

Underneath sits Alfa's Heat Genius. A true firebrick, made in Italy, that holds heat like the floor of a Naples pizzeria, well past the lava stone or ceramic you find in mass-market ovens. Double-layer insulation keeps the heat in and the shell cool to the touch. The Full Effect flue rolls hot air back over the pizza instead of losing it up the chimney.

Gas now, wood when you want it. The Alfa Hybrid Kit turns this gas oven into a wood-fired one whenever the moment calls for it: clean, quick heat on a weeknight, live fire and smoke on a Saturday. One oven, your call.

Our advice

Go with it if you like to host but you're not running a restaurant, you've got a terrace or a corner of the yard for it, and you want a real high-heat oven that pulls its weight.

Step up to the 3 Pizze if you host big and two at a time feels tight.

What we'd suggest: start on gas for the ease, then add the Hybrid Kit if wood's already on your mind. Most of our customers do.

Maintenance and Precautions

Day to day

Let the oven cool, then brush the floor with a brass brush. No soap, no water on the brick: the heat burns off residue on the next firing. Wipe the stainless shell with a soft cloth.

Winter and protection

In our Canadian climate, keep the oven covered between uses with the Alfa cover. For winter, store it sheltered or leave it outside well covered and raised off the ground.

Avoid

Do not run a cold oven to full power the first few times: bring it up gradually to season the brick. Never use abrasive cleaners on the floor. Do not move the oven while hot.

Does this oven make real Neapolitan pizza?
Yes. It reaches 1000°F (500°C), the temperature a Neapolitan needs to bake in 60 to 90 seconds. The HeatKeeper firebrick keeps the floor hot between pizzas so you can cook back to back.
Propane or natural gas, which should I choose?
Propane (tank) if you want to move the oven around with no hookup. Natural gas if you already have a line in the yard and the oven stays put. Both cook exactly the same. And a conversion kit exists if you change your mind later.
How many pizzas can it bake in a row?
The floor fits two 12-inch pizzas at once and recovers its heat quickly between bakes. For an evening of six to eight, everyone eats without waiting their turn.
Can I use it year-round in our climate?
Yes, as long as you protect it with its cover between uses and let it heat a little longer when it is cold out. The double insulation handles thermal shock well. We have customers making pizza in the dead of winter.
Do I need a base, or can the oven sit on a table?
The oven on its own (Top version) sits on a solid, heat-resistant surface. The Alfa rolling base is handy if you want to move the oven and store the tank or wood underneath.
