The Firenze is Fontana's medium hybrid format. 68,000 BTU burner, 672-square-inch cooking chamber, no-compromise choice between gas and wood. For people who host often, who want a real Italian oven without stepping up to the Roma's format.

Handmade in Mantua, Italy, since 1978.

Fontana was the first in the world to build a metal wood-fired pizza oven. More than 45 years later, the Fontana family still runs it. You feel the difference from the first pizza.

The Firenze is Fontana's medium hybrid oven, sitting between the Napoli (compact) and the Roma (XL). It's the oven we recommend when you host more than just the immediate family, and you want gas/wood flexibility with enough chamber to cook three pizzas at once.

Pick this one if: you regularly host 6 to 10 people, you want gas/wood flexibility, your outdoor space can fit a medium-format oven.

Go with the Napoli if: you want more compact (two pizzas, format for backyard, balcony, or cottage).

Go with the Roma if: you regularly host 10 to 20 people and you want four pizzas at once.

Go with the Mangiafuoco if: you want pure wood in a comparable format.

What we'd suggest: pair it with the Fontana cart (sold separately) for mobility, or set it on an outdoor counter. And consider the Saputo Biscotto stones if you're chasing pure Neapolitan pizza at 900°F in 60 seconds.

Daily care

  • Let the oven cool completely before cleaning
  • Brush the cooking stone with a brass brush, never water or soap directly on a hot stone
  • Wipe the exterior with a damp cloth and a mild stainless steel cleaner

Winter and protection

  • The Firenze is built to stay outdoors year-round thanks to 304 stainless steel and anti-corrosion coating
  • We recommend a Fontana cover to extend its life against rain, snow, and frost
  • In very cold weather, bring the oven up gradually on first fire to avoid thermal shock

What to avoid

  • Never run the oven without the chimney cap installed
  • Don't pour cold water on a hot stone (it will crack)
  • Dry hardwood only, never treated, never resinous like pine

Can the Fontana Firenze stay outdoors through a Canadian winter?
Yes. The Firenze is built to stay outdoors year-round thanks to 304 stainless steel and an electro-galvanized anti-corrosion coating. We recommend a Fontana cover to extend its life against weather. In very cold conditions, bring the oven up gradually on first fire to avoid thermal shock.
What's the difference between the Firenze and the Napoli?
Both are gas-and-wood hybrids, made in Italy, with the same build quality. The Firenze is the step up: a 68,000 BTU burner (vs 54,000 for the Napoli), 672 square inches of cooking surface (vs 480), and capacity for three pizzas at once (vs two). If you regularly host 6 people or more, the Firenze gives you the capacity. For 4 to 6 people in a compact format, the Napoli is plenty.
How long does heat-up take?
On gas, about 30 minutes to reach 750°F (400°C). If you want to push to 900°F (482°C) for real Neapolitan in 90 seconds, plan on 40 to 50 minutes. On wood, similar, around 45 minutes once the flames are well established. Max temp is 900°F (482°C).
Does the Firenze run on natural gas?
The Firenze ships with propane as standard. To switch to natural gas (common in Canadian homes), you need the Fontana conversion kit. It's a simple installation, best done when you first install the oven.
Are the Saputo Biscotto stones worth it?
If you want real Neapolitan at 900°F in 60 to 90 seconds, yes, they change the game. Saputo Biscotto stones are made from refractory alluvial clay near Naples, and they're the only surface that handles those temperatures without burning the dough. For New York-style or slower cooks, the standard stones do the job just fine.
What's the warranty on the Firenze?
