Description

The Napoli is Fontana's compact hybrid oven. Italian one-piece welded construction, no-compromise choice between gas and wood, in a format built for the backyard, the balcony, or the cottage. For pizza nights with 4 to 6 people, not for twenty guests.

Under the hood: a 54,000 BTU burner, a 480-square-inch cooking surface (two 10-inch pizzas or two 12-inch pizzas at once), and a max temperature of 900°F (482°C), which it hits in 30 minutes on gas. The build is 100% Italian since 1978: a Corten-reinforced 5mm dome welded as one piece, 4.7 inches of rock wool insulation, 304 and 441 stainless steel. Built to last ten-plus years through Canadian winters.

Go with the Firenze if: you want the next step up in hybrid, with a more powerful 68,000 BTU burner, 672 square inches of cooking surface, and the capacity to cook three pizzas at once.

Go with the Margherita if: you want pure wood in the same compact format as the Napoli.

Can the Fontana Napoli stay outdoors through a Canadian winter?
Yes. The Napoli is built to stay outdoors year-round thanks to 304 stainless steel and an electro-galvanized anti-corrosion coating. We recommend a Fontana cover to extend its life against weather. In very cold conditions, bring the oven up gradually on first fire to avoid thermal shock.
What's the difference between the Napoli and the Firenze?
Both are gas-and-wood hybrids, made in Italy, with the same build quality. The Firenze is the step up: a 68,000 BTU burner (vs 54,000 on the Napoli), electronic ignition with a built-in pilot light that automatically reignites the flame, and three 12-inch pizzas per batch (vs two 10-inch on the Napoli). If you regularly host 6 to 8 people or more, the Firenze gives you the capacity and the comfort. For 4 to 6 people in a compact format, the Napoli is plenty.
How long does it take to reach cooking temperature?
On gas, about 30 minutes to hit 750°F (400°C), perfect for pizza. To climb to 900°F (482°C) for true Neapolitan in 90 seconds, plan 40 to 50 minutes. On wood, it's similar, around 45 minutes once flames are well established. The oven tops out at 900°F (482°C).
Does the Napoli run on natural gas?
The Napoli ships set up for propane. To switch to natural gas (very common in Canadian homes), you'll need the Fontana conversion kit. It's a simple install, done at the time of initial setup by a qualified technician.
Are the Saputo Biscotto stones worth it?
If you want true Neapolitan pizza at 900°F in 60 to 90 seconds, yes, it changes everything. Saputo Biscotto stones are made of refractory alluvial clay from Naples, and they're the only surface that can hold those temperatures without burning the dough. For New York-style pizza or slower cooks, the Napoli's standard stones do the job well.
