For the whole tomato version, you'll need to chop them, but it's worth the effort: it's also the version recommended by top chefs. With chopped tomatoes, you save a step, because they're already chopped. In both cases, you don't need to simmer. Simply try both and decide which you prefer.

For a great homemade pizza sauce using your DOP tomatoes, follow these steps:
- Add olive oil, salt, and a spoonful of whole tomatoes to the blender (you can also add garlic, oregano, chili flakes, and a little bit oftomato paste).
- Mix.
- Add the rest of the tomatoes, mix again (not too long to avoid releasing all the water from the tomatoes).
